This epic dish was invented in the 1990s, when Joseph “Sepp” Blatter was in his mid-fifties. It’s a fusion dish of two staple dishes from Costa Rica: chicharrón y frijoles, called Chifrijo. It’s a snack, a dip popular in bars and restaurants, so special it was copyrighted by a bar restaurant owner.
There are 16 steps and 16 pictures in this recipe reppic (epic recipe in pictures) to make this dish full of ‘pura vida’ (the most common expression in Costa Rica) which sums up all the flavours and the social spirit of the Costa Rican people.
Approximate time 1 hour 35 minutes: 15 minutes preparation and 1 hour 20 cooking. It’s very fatty so you’ll need to serve it with a cold beer to cut through the pork belly.
